Brown Rice Pilaf (Daniel fast)
You can customize this recipe by adding different fresh herbs: add parsley, thyme or a bayleaf for a french twist; alternatively, add a bunch of fresh cilantro to enjoy this rice with a side of beans and guacamole for a winning combination that makes a complete protein.

- 2 Tbs olive oil
- 2 cups brown rice
- 1/2 onion, chopped
- 3 sprigs of fresh parsley/ cilantro
- 4 cups vegetable broth or water
- 1 tsp sea salt
- 1/4 tsp black pepper
Make It
1. Heat oil, sauté onion for 5 minutes
2. Add brown rice and satue for 3 minutes over medium heat.
3. Add vegetable broth, salt and pepper.
4. Bring to a boil, reduce heat to low, add fresh herbs and cover for 40 minutes.
5. Turn off heat, and leave covered for 10 minutes.
6. Uncover, toss bunch of cooked herbs, fluff with fork.
7. Garnish with fresh herbs over the top.
