Chicken (Spaghetti) Chowmein Recipe

Getting your family to eat vegetables is effortless with chowmein, you can make it with any veggies on hand: cabbage, kale, broccoli, bell peppers, carrots and more!  The key to a good chowmein is thinly sliced veggies that blend with the noodles.

Chowmein is a noodle that I don’t usually have on hand, I often improvise with spaghetti. As strange as it seems, spaghetti is the perfect substitute for chow win because it is made with eggs, unlike many of the noodles sold in the supermarket. For best results, drain the cooked spaghetti a half hour before starting your chowmein.

Tips for a delicious chowmein

  • Peanut oil is best, canola oil is good, but olive oil won’t do as it throws the flavor off;
  • If the hot oil splatters when heated or adding ingredients to the pan, lower the heat;
  • Opt for green or brown onions;
  • 1/2 package of spaghetti is enough for 1 chicken breast;
  • Cornstarch is a tenderizer and is included in the marinade;
  • An enameled pot, or large skillet can sub for a wok.

Ingredients

  • 1 chicken breast, cut into 1-inch pieces
  • 1/2 package spaghetti noodles, cooked and drained
  • 3 Tbs peanut oil
  • 3 garlic cloves, thinly sliced
  • 1 large carrot, julienned
  • 1/2 cabbage, shredded
  • 1/2 onion, thinly sliced in wedges
  • 4 green onions, chopped into 2-inch pieces

Marinade

  • 1 tsp corn starch
  • 1 Tbs soy sauce

Chowmein Sauce

  • 2 Tbs soy sauce
  • 2 Tbs oyster sauce
  • 2 Tbs Shaoxing Chinese cooking wine or Mirin
  • 1 tsp corn starch
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • 1/4 tsp white pepper

Make it

Prep Chicken, noodles and sauce before you cook.

  1. Prepare your noodles or spaghetti first according to package directions, drain an set aside;
  2. Marinade chicken for at least 20 minutes;
  3. Mix chowmein sauce together and set aside.

How to cook chowmein

  1. Heat oil, onions for a few minutes, add garlic and cook for less than a minute. Make garlic doesn’t burn;
  2. Add chicken, cook on medium-high heat 5 minutes, until 90% done; 
  3. Stir in carrots and cook for 1 minute;
  4. Add cabbage  green onion and cook for 2 minutes;
  5. Add noodles, and cook for 2 minutes;
  6. Add sauce, cook until noodles dry and fully coated; 
    Remove from heat and enjoy!
