Foolproof Thanksgiving Turkey Recipe

Over 10 years ago Paula Deen saved my family’s Thanksgiving! My mom was recovering from surgery and asked me to cook Thanksgiving dinner for our family. I remember searching online for a recipe and coming across Paula’s Maple Glazed Turkey recipe which was perfect because the cranberry glaze resulted in a cranberry sauce.

Thank goodness I had no idea what a big deal it is to cook a turkey. I followed Paula’s recipe to a T and my mom put me in charge of the turkey ever since!  

Paula’s recipe uses about 1 tablespoon of butter per every 2 pounds of turkey, I do a mix of butter and olive oil. Additionally, I stuff the turkey’s cavity with shallots and opt for a Butterball Turkey. 

I use Paula's house seasoning mix, in this recipe year round on all my poultry dishes!  

Paula Deen’s Turkey Recipe

Tips 

Defrost Turkey 1 Day Ahead.
Prep spices and butter mixture one day ahead. 
Preheat oven to 375 F
Cook 18 minutes per pound of turkey
*Notes my changes to Paula’s original recipe

Ingredients:

  • 1 -15 pound turkey
  • 4 Tbs butter
  • 4 Tbs olive oil*
  • 2 Tbs fresh parsley, chopped
  • 2 Tbs shallots, minced
  • 2 Tbs garlic, minced
  • 1 Tbs Paula’s house seasoning: 

Paula’s House Seasoning

Mix together:
  • 1/2 cup sea salt*
  • 1/4 cup black pepper 
  • 1/4 cup garlic powder
  • 1/4 cup onion powder

Cranberry Maple Glaze

3 Tbs salted* butter
12 oz cranberries
1/2 cup maple syrup
1 1/2 cup apple cider*
1/4 cup brown sugar
1 Tbs* apple cider vinegar 
1 tsp ground black pepper

Make It

Make Cranberry Maple Glaze 1 day ahead and refrigerate in a Mason jar. 

Cranberry Maple Glaze 

  1. Boil cranberries with the rest of the glaze ingredients in pot until the berries burst;
  2. Run glaze through a food mill* or sieve;
  3. Separate the liquid glaze and cranberry pulp into espérate jars;
  4. Serve pulp as cranberry sauce;
  5. Spoon glaze over the turkey. 

Turkey

  1. Preheat oven to 375 F
  2. Mix butter, olive oil, parsley, shallots, and house seasoning together in a bowl. Set aside;
  3. Rinse turkey and pat dry, set in roasting pan.
  4. Rip the skin of the turkey breast and rub the butter mixture under the skin and any remaining mixture over the skin.
  5. Stuff turkey cavity with any extra shallots and parsley* this is my personal twist which has rendered me a juicy turkey every year! 
  6. Use kitchen twine to tie turkeys legs together and tuck in the wings. 
  7. Place turkey in oven and bake for 18 minutes per pound. So 18 minutes x pounds = total cook time in minutes. I like to time my turkey to be ready 30 minutes before dinner guests arrive. 
  8. 15 minutes before cook time is over add a few spoonfuls of the glaze over the turkey. 
Example: dinner is at 5pm. 15 pound turkey, 270 minutes cook time = 4 hours 30 minutes cook time. Place turkey in oven at 12 pm to be ready by 4:30 pm.
