Shrimp in Parsley and Butter

The abundance of parsley growing in the garden inspired today’s recipe for shrimp in parsley and butter. Shrimp in Parsley and Butter

INGREDIENTS

One pound shrimp, cleaned and deveined
2 Tbs salted butter
1 Tbs olive oil
2 garlic cloves, minced
2 Tbs parsley minced
Fresh lemon juice from one lemon
Ground black pepper to taste

MAKE IT

  1. Sauté garlic in olive oil for 1 minute over medium heat;
  2. Add butter and shrimp, sprinkle with pepper, cook for 3 minutes;
  3. Turn shrimp, add fresh lemon juice and parsley, sauté for 3 more minutes.
How to cook shrimp
The shrimp should be pink on each side when fully cooked.

My favorite way to enjoy this is over a fresh salad, with a side of French bread to soak up all those yummy juices.
