Old Fashioned Blueberry Pancake Recipe
You can make pancakes without pancake mix the same way they did way back when. All you need is a little all purpose flour and a few other kitchen staples to have fluffy delicious pancakes for breakfast or any time of day. Use less milk for denser pancakes and more milk for thinner pancakes. This month, blueberries are in season so of course it is the perfect time to enjoy fresh blueberry pancakes!
Top with fresh blueberries, butter and serve with a side of maple syrup.

2 cups fresh blueberriesAutumn Spiced Waffles
SERVINGS
Makes 6 - 8 pancakesINGREDIENTS
Basic Pancakes
1 1/4 cups all-purpose flour
2 Tbs sugar
2 tsp baking powder
2 tsp baking powder
1 1/3 - 2 cups milk
1 egg
1 tsp vanilla extract
2 tbs coconut oil
1 tsp vanilla extract
2 tbs coconut oil
2 cups fresh blueberries
1 tsp cinnamon
Toppings
Butter, maple syrup, honey, powdered sugar or preserves.
MAKE IT
- Mix the dry ingredients together.
- Mix in the next five ingredients.
- Gradually add more milk, eggs, and vanilla extract until the batter has the desired consistency.
- Heat coconut oil in skillet on medium-low.
- Add 1/4 cup of batter to the center of the skillet to form your pancake.
- Sprinkle blueberries over the top of the pancake.
- After 3 minutes wiggle the skillet to check if your pancake slides.
- Once your pancake slides flip it and cook other side for 2 to 3 minutes.
- Place cooked pancakes in a separate warm skillet with lid until breakfast time.
- Continue this until you use up all the batter.
