Roasted Cornish Hens Recipe
This flavorful recipe is perfect for all kinds of poultry and is my go-to when entertaining because it guarantees a juicy bird, and is ready in about an hour.
5 tablespoons unsalted butter softened
3 tablespoons olive oil
11/2 teaspoons of sea salt
3/4 teaspoon ground black pepper
3/4 teaspoon of garlic powder
Ingredients
6 11/2- to 2-pound fresh or frozen (thawed) Rock Cornish hens
5 tablespoons unsalted butter softened

3 fresh garlic cloves, minced
1 shallot, diced
1 shallot, diced
2 tablespoons of fresh parsley, chopped
3 large onions (1 onion cut in 6 pieces and 2 onions cut into rings)
2. Rinse Cornish hens, pat dry, and place them in a roasting pan over the onions
3. Beat the butter, olive oil and remaining 6 ingredients in a bowl
4. Loosen the skin of each hen breast and spread butter mixture evenly between the skin and breast meat and place 1 of the 6 onion pieces in the cavity of each hen
5. Roast at 375'F for 1 hour, every 15 minutes pour pan drippings over the hens
6. The hens are ready when the juices from a pierced thigh run clear or a meat thermometer reaches 165'F

Gravy
Skim the fat from the cooking juices and make a gravy by whisking in 3 tablespoons of flour and 3 tablespoons of water and boiling over medium heat for 5 minutes.Buen provecho!
